Chinese L otus Root Salad 

Ingredients:

300g lotus root

30g wolfberry fruits

30g shredded ginger

Seasonings:

One bowl of vinegar

One bowl of sugar

Directions:

Rinse lotus root and cut into slices. Blanch in boiling water and chili in cold water.

Melt sugar in one bowl of boiling water. Mix in vinegar.

Add wolfberry fruits into step 2 and soak lotus root. Store it in the fridge for one hour.

Remove to serving plate and serve with shredded ginger.
