Jady Shrimp
Ingredients:
50g Fresh Green Peas
150g Shelled Shrimps
200g Young Pea Leaves (“Dou Miao”)
1 Egg White
A Dash of Salt
1 tsp Cornstarch
A Dash of Pepper
2 tsps Baking Soda
1 tbsp Minced Ginger
1 tbsp Minced Green Onion
Additional fried young pea leaves for garnish
Sauce:
80 cc Stock
1 tbsp Cornstarch
A Dash of Salt
A Dash of Pepper
Directions:
Add the baking soda to the shrimps and mix well, let marinate for awhile and rinse THOROUGHLY. Then use a towel to dry the shrimps.
Add the salt, pepper, egg white, cornstarch to the shrimps. Parboil the shrimps with oil until 70% done, then remove and put aside. Add 1 Tablespoon oil to the hot wok.
Add minced ginger and minced garlic and stir fry until fragrant. Then add the shrimps and green peas and continue stir-frying.
Add the ingredients for the sauce (mix well first) and cook until the sauce turns thick. Serve hot. If prefer, you may garnish with additional fried young pea leaves.
