Chinese Tomato and Cucumber Salad Recipe

Tomato and Cucumber Salad 

Serves 4:


4 tomatoes, dipped in hot water, peeled and stemmed

1 cucumber, cut into ½ inch slices

Mixture A:

2 tbsp sugar

2 tbsp vinegar

1 tbsp ketchup

2 tbsp water

1 tsp cornstarch

A few drops of sesame oil


Cut each tomato into 8 wedges. Trim the cut edges of the cucumber slices, rounding them off to form a smooth surface. Place the cucumber in the center of a serving dish, and surround with the tomatoes.

Heat Mixture A, cooking until thickened. Add a little sesame oil. Pour the heated sauce over the vegetables.
