Chinese Curry Sea Cucumber Recipe

Curry Sea Cucumber


2 soaked sea cucumber

1 cup onion, cut

1 cup eggplant, cut

1 cup potato, cut

some crushed garlic.


2 Tbsp curry sauce

4 oz chicken stock

2 Tbsp coconut cream

1/2 tsp salt

1/2 tsp sugar


Cut sea cucumber into pieces; blanch briefly in boiling water with green onion and ginger. Remove sea cucumber and set aside.

Stir-fry onion, eggplant, and potato at high heat, add sea cucumber and curry paste and keep frying for a few minutes, then add seasoning and cook until the sauce thickens.
