Chinese Chicken Rice Salad Recipe

Chinese Chicken Rice Salad 

Serves 6


3 c. cooked rice

2 1/2 c. cooked chicken

1 (8 oz.) can water chestnuts, drained and sliced thin

2 med. carrots, cut into matchsticks

1/2 c. walnuts

2 tsp. cider vinegar

2 tbsp. vegetable oil

1 tbsp. soy sauce

1 tbsp. honey

1 clove garlic, minced

1 tsp salt

1/2 tsp. ground ginger

1/8 tsp. red pepper


Cool rice.

Combine rice, chicken, water chestnuts, carrots and walnuts.

Blend vinegar, oil, soy sauce, honey, garlic, salt, ginger and red pepper.

Mix with rice and chill.
