150 g (6 oz) Tang flour (wheat starch, can be bought at Chinese grocery store)
60 g (4 oz) cornflour
1 1/2 tbsp lard or oil
350 g (12 oz) sweetened lotus seed paste / sweetened red bean paste / sweetened sesame paste (can be found at Chinese grocery store, however, you can also use sweetened chestnut puree or even thick custard if you wish)
160 g (7 oz) boiling water
In a large bowl, sieve Tang flour and cornflour. Pour in boiling water and stir quickly. Rub. Then add in oil. Flour hands with Tang flour and rub the dough into pastry shell.
Divide fillings into portions and then wrap with pastry shells. Stuff the dough in cake tin (Chinese traditional cake mould, small in size and made of wood) and press to make patties.
Take out the patties and brush with oil. Arrange in bamboo steamer and steam for 10 minutes. Serve.
