1½ pounds new potatoes
6 tbsp vegetable oil
? tsp asafoetida (optional)
½ tsp whole black mustard seeds
½ tsp whole cumin seeds
? tsp ground turmeric
½ tsp ground coriander seeds
½ tsp ground cumin seeds
¼ tsp cayenne
¾ tsp salt
Chop the potatoes. Heat the oil in a frying pan on a medium heat.
When the oil gets hot, put the asafoetida, mustard seeds and the cumin seeds.
Now put in the potatoes and stir once or twice. Sprinkle in the turmeric.
Continue to stir every now and then and cook for about 15 minutes or until the potatoes are lightly browned and almost done.
Sprinkle in the ground coriander, ground cumin, cayenne, and salt.
Stir and cook for another 1 to 2 minutes.
