Chinese Shrimp Noodles Recipe

Shrimp Noodles


1 tsp cornstarch

1 egg white

¼ lb shelled shrimp

¾ lb fresh egg noodles


3 tbsps lard

2-3 scallions, cut into 1 inch pieces

2 tbsps soy sauce

1 tbsp dry sherry

1 tsp sugar

1 tsp sesame oil


Mix the cornstarch with the egg white in a bowl. Add the shrimp and toss to coat well.

Cook the noodles in boiling salted water for about 5 minutes. Drain and rinse under cold running water.

Melt the lard in a pan. Add the scallions and shrimp and stir-fry for 1 minute.

Add the soy sauce, sherry and sugar and stir well. Add the noodles and mix well. Continue cooking for 2 to 3 minutes, then add the sesame seed oil just before serving.
