Teochew_Style Steamed Fish  


1 Siakap, about 600 g

80 g meat, sliced

1 soft beancurd

80 g salted vegetables, sliced

1 tomato, wedged

2 preserved wet sour plum, mashed

½ tsp chopped garlic

5 pcs ginger, shredded


½ tsp light soya sauce

1 tsp oyster sauce

¼ tsp sugar

1/3 tsp salt

1 tsp Shaoxing wine


Scale, remove gills and intestines, and dimidiate. Clean and drain. Arrange on a plate.

Cut beancurd into 4 pieces.

Heat up wok with 2 tbsp of oil, stir fry ginger shreds and chopped garlic till aromatic, then add in meat, beancurd, salted vegetables, tomato, plums and seasoning, mix well and pour over fish.

Steam for 9 minutes at high heat. Ready to serve.
